Always try to enchant you gear to the max, but avoid useless/unhelpful enchants like Thorns, Frost Walker, Knockback and Fire Aspect.
Why?
Because damage ticks exist. So for example your thorns hit an enemy last millisecond, then you can't attack the enemy for another 0.499 second - Minecraft mobs can only take damage every 0.5 second, unless you have Bonus Attack Speed. This works the same way as fire aspect.
