How do fall back values or automatic unsets work?

i know very basic c# (currently in my game dev major course) so i understand what strings, doubles, and longs are (even if i can never remember the difference between a long and an integer), but for the life of me i can't figure out what these two mean. i kinda understand that if no value is provided, then it sometimes needs something to fall back on, but does this effect any of my previous code? what does an automatic unset do? that one i have no clue what it's referring to
