Mojang take a lot of real world ideas and use them in the game. This is evident by the minerals and crops (etc.). However, I don't understand why poisonous potatoes can't be composted rather than being pretty much the only waste item in the game.
It is true that a green potato is poisonous due to its higher levels of "solanine".
"The green is nothing more than chlorophyll, a harmless compound found in all green plants."
"However, when potato tubers turn green there is usually an increase in a glycoalkoloid compound called solanine." (Source)
But you can cut the green parts off and still eat them, otherwise, throw them in a compost pile.
"The good news is that most of the solanine can be removed by simply peeling away the green skin. If there is a lot of green under the skin, the potato should be tossed into the compost pile." (Source)
"You can still plant them. In fact, if you put them in a compost pile they will likely sprout. Seed potatoes often rot anyways, so it's not like you'd accidentally eat it." (Source)
