This is just something I noticed after playing Survival for a while in the newest snapshot. I decided to not touch the enchanting table or trade enchanted tools from villagers. All enchantments I found just came from chests in structures, mob drops, and those new vaults in the trial chambers (though I know their current loot table is a temporary stand-in).
My verdict is that it actually adds a lot to survival to just find enchantments in the world the same way you'd find anything else in the game, instead of jumping between several GUI screens, using anvils and grindstones to control the enchanting table's randomness (and taking intermittent breaks to XP grind). Or bypassing that already broken system by just training villagers to work in a giant vending machine to dispense every enchantment you could want in the game.)
Oddly enough, considering how enchantments are placed in the world as treasures, it would be a decent system that can enrich survival. Especially with the changes they're making in 1.21 which causes books with specific enchantments to generate in specific structures, giving you more incentives to explore the world.
But that system breaks down entirely just because of that floating book that will give you the most powerful equipment in the game if you bury your face in it for long enough, and ignore the world you're playing in.
So if you want a reason to start a new Minecraft world, I suggest you try a run with no enchanting tables, no librarians, and no fishing. You're just avoiding all of the means of creating enchantments. Instead, play slowly, build more, explore the world, and discover enchantments. It'll feel much more rewarding to find them.
Currently trying to get a Fortune pickaxe, so I'm searching for Ancient Cities.
